Recipe Friday: Spicy Crispy Chicken Sausage Sliders

It's National Chicken Month! With spicy chicken sandwiches all the craze, check out this newly developed recipe from Jones Dairy Farm. This stacked sandwich features a Jones Chicken Sausage Patty breaded using a three-step process, then topped with pickled red onions, spicy aioli, bread and butter pickles and more. 

Spicy Crispy Chicken Sausage Sliders

Ingredients

4  ea. Jones All Natural Golden Brown Chicken Sausage Patties, thawed
4 ea. slider buns (mini pretzel rolls work great!), buttered and toasted
1 cup oil for frying (approximately)
4 ea. slices cheese of choice (cheddar or muenster recommended)
Batter (recipe below)

Ingredients for Wet Mix for Breading

1 egg, beaten
½ cup milk
1 T favorite hot sauce

Ingredients for Dry Mix for Breading

1 cup flour
1 ½ tsp salt
1 tsp baking powder
1 tsp pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika

Ingredients for Sandwich Toppings

4 ea. green lettuce leaves
4 ea. slices of tomato
12 ea. slices bread and butter pickles
½ cup pickled red onions (recipe below)
Spicy Aioli (recipe below)

Method

  1. Whisk ingredients for wet mixture in a bowl.

  2. Whisk ingredients for dry mixture in another bowl.

  3. Prepare your workstation by placing a baking sheet topped with a rack next to your stove.

  4. Pour 1” of oil (canola, vegetable or peanut) into a sauce pot or deep skillet. Heat to 350° F. (use a thermometer).

  5. While oil is heating, dip chicken patties (one at a time) in flour, and coat both sides. Using tongs, dip the patty into the egg mixture to coat completely, and then once again back into the flour mixture. You want to achieve a “shaggy” look on the final breading.

  6. Set breaded patty on rack and continue with remaining patties.

  7. Once all patties are breaded and oil temp is at 350° F, place all 4 patties into hot oil. Fry 2 minutes until color is a medium golden brown, then flip and fry another 2 minutes. Remove from hot oil and place on rack.

  8. Build sliders by layering bottom bun, aioli, lettuce leaf, tomato slice, cheese, chicken patty, 3 pickle slices, red onions, aioli, and top bun.

  9. Repeat with remaining ingredients. 

Ingredients for Pickled Red Onions

1 ea. medium red onion, sliced thin
1 ea. clove garlic, peeled
3 T sugar
1 T salt
1 cup white vinegar

Method

  1. Place sliced onion and peeled garlic into a glass jar or bowl.

  2. In a small sauce pot, combine sugar, salt, and vinegar and stir until sugar and salt are dissolved. Bring mixture to a boil over medium-high heat. When it reaches a boil, pour the vinegar mixture into the jar. Press the onion down so all the pieces are submerged and let cool to room temperature.

  3. Once cool they are ready to use. You may store any leftovers in the refrigerator for 3-4 weeks.

Ingredients for Spicy Aioli

½ cup mayo
2 T favorite hot sauce

Method

Mix in a small bowl and set aside until ready to use.
