Recipe Friday: Share a Toast with Dad

This Father’s Day, Dad may like to keep things simple in the kitchen. Let the grill do the work and make sauce the boss. Antelmo Faria, owner of Uma Casa in San Francisco, balances bold tamarind and chipotle in adobo with bracing apple cider vinegar, Worcestershire and other classic barbecue ingredients in Tamarind Chipotle BBQ Sauce.  

Tamarind Chipotle BBQ Sauce

Ingredients

1 cup The Perfect Purée Tamarind Puree, thawed
2/3 cup ketchup

 2 T chipotle in adobo

1 T worcestershire sauce

2 T apple cider vinegar

1 T dijon mustard

2 T honey

2 T molasses

2 tsp salt

1 tsp onion powder

1 tsp garlic powder

½ T garlic, minced

Method

  1. Puree all of the ingredients together in a blender.
  2. Simmer on medium-low heat for about 15 minutes.

Plus, Father’s Day and National Martini Day coincide this year one June 19, which makes the day extra celebratory for the many dads who like grilling and martinis.

Dad's Gold Star

Dad's Gold Star from Jonathan Pogash of The Cocktail Guru is a distinctive tropical combination of mango vodka, falernum, pink guava puree, cucumber bitters and lime juice. It's fresh,breezy and seasonal.

Ingredients 

1 oz. Van Gogh Mango Vodka
1 oz. Bitter Truth Golden Falernum liquer
1 oz. The Perfect Purée Pink Guava Puree
1 oz. fresh lime juice
3 dashes Bitter Truth cucumber bitters
fresh mint (garnish)
lime wheel (garnish)

Method

  1. Shake all ingredients very well with ice and strain over ice into a glass.

Apricot Saketini

Amy Witz, the sommelier at Balanced Rock Winery in Chicago swaps sake for vermouth and combines velvety apricot purée with vodka, fresh citrus juice and orange bitters in her Apricot Saketini.

Ingredients

¼ oz North Shore Vodka
1 oz. Pure Snow Nigori Sake
2 oz. The Perfect Purée Apricot Puree, thawed
¼ oz fresh squeezed orange juice
dash of freshlime and lemon juices
3 dashes of orange bitters

Method

  1. Combine vodka, sake, Apricot Puree and juices into a shaker with ice.
  2. Shake and strain into a martiniglass. Add 3 dashes of orange bitters and one orange slice for garnish. Serve

Blood Orange Drop

Citrus and vodka go together like, well, dads and martinis. Blood Orange Drop turocharges the flavor combination with blood orange vodka, blood orange concentrate and fresh lemon and lime juice for complexity. Creator Jenni Karakesevic, owner of Charbay Distillery, adds a half ounce of simple syrup to offset the pucker effect. 

Ingredients

2 oz Charbay Blood Orange Vodka
1 oz The Perfect Purée Blood Orange Concentrate, thawed
1 oz fresh lime and lemon juice
½ oz simple syrup
Blood orange wheel for garnish

Method

  1. Add ingredients except for garnish into a Boston Shaker with ice.
  2. Shake and strain into a martini glass.Garnish with a blood orange wheel. Serve
