Recipe Friday: Portugese Sausage and Onion Stew

Warm up this January with a Portugese Sausage and Onion Stew recipe from the National Onion Association. January also just so happens to be National Soup Month.

And who knows, maybe something hot and comforting is just what the doctor ordered after the stress and busyness of the holiday season. Enjoy! 

Portugese Sausage and Onion Stew

Yield: 12 


2 pounds spicy Italian sausage
2 pounds mild Italian sauage
2 quarts yellow onions, sliced
1 ¾ quarts potatoes, cut into ½ cubes
1 quart celery, sliced
1 quart zucchini, sliced
1 ¾ quarts tomatoes, whole peeled, undrained
2 cans (15 counces ea.) red kidney beans, undrained
2 quarts water
2 T garlic, minced
2 tsp anise seed, crushed


  1. Remove sausage meat from casings. 
  2. Crumble and sauté sausage until cooked. 
  3. Drain off fat. 
  4. Combine sausage and all remaining ingredients in kettle. 
  5. Cover, bring to boil and simmer, covered, for 45 minutes or until potatoes are tender and flavors well blended.
