Recipe Friday: Emergen-sea, a 2023 Food Trend

The next wave of plant-based meat alternatives is seafood.

Global fish consumption has doubled since 1998 and is projected to nearly double again by 2050; however, 70% of marine fish populations have been fully used, overused, or are under severe threat because of rising ocean temperatures, overfishing, and unsustainable fishing practices, and pollution, according to the Food Institute.

The continued popularity of seafood, and a keener focus on sustainability, has given rise to seafood alternatives. Common ingredients in alternative seafood products are mung beans, seaweed, soybeans, fava beans, peas, and green lentils. Additionally, banana blossom is gaining popularity because of its flaky texture.

Tijuana Shrimp

Yield: 225

Ingredients

450 ea. New Wave Foods Cajun Breaded Shrimp
3 bunches cilantro or micro cilantro for garnish
1 case 6” white corn tortillas
1 cup Sazon spice
¼ cup ancho chile powder
2 T onion powder
½ cup dried parsley flakes

Method

1.      Cut tortillas into ¼’s
2.      Fry for 3 minutes
3.      Remove & IMMEDIATELY toss evenly with seasoning
4.      Place on sheet trays and pick the 225 best chips, flat or slightly curved

Ingredients for Avocado & Citrus Salad

60 ea. Hass avocadoes, cut in half & diced ½”
10 ea. kiwi, pre-cut
20 ea. oranges, pre-cut
10 ea. limes, pre-cut
8 ea. grapefruit, pre-cut
6 ea. bulbs fennel, fine julienne
3 ea. red onion, fine julienne
1 bunch mint
¼ cup EVOO
Sand & pepper to taste
¼ cup broken chile flakes (MILD)

Ingredients for Roasted Tomato Salsa

20 ea. 5x6 tomatoes, cored and scored
3 T olive oil
3 ea. red onion, core removed and quartered
3 ea. carrots peeled & chopped
8 ea. cloves garlic
3 ea. serrano chiles
2 bunch cilantro

Method

1.      Toss tomatoes, onions, peppers & garlic with oil
2.      Season with salt and pepper
3.      Roast in a 400º oven for 35-45 minutes, charring vegetables
4.      Place in a food processor with oil & puree
5.      In a large bowl combine chopped cilantro and adjust seasoning

Ingredients for Shrimp Seasoning

¼ cup flaked salt
1 T fresh black pepper
2 T ancho chile powder

Ingredients for Assembly

1 seasoned Tortilla chip
½ scoop avocado citrus salad (drained)
Fried shrimp seasoned
Chile thread
Cilantro leaf garnish
