
Soba Noodle Salad
A refreshing summer salad using herbs from your own garden!
Serves 8
3/4 cup rice wine vinegar
1/4 cup sugar
1 tsp salt
3 garlic cloves, minced
1 jalapeño, seeded and minced
3 tbsp fresh lime juice
Zest of one lime
1 tbsp sesame oil
12 oz soba noodles, cooked
1 red pepper, chopped
1 mango, peeled and cubed
1 cup fresh basil, chopped
1 cup fresh mint, chopped
1 cup roasted peanuts, chopped
Place vinegar, sugar and salt in a saucepan over medium heat until sugar and salt dissolve, about 2 minutes. Stir in garlic and jalapeño and allow to cool. Add lime juice and zest and sesame oil and mix well.
Toss soba noodles with dressing. Add remaining ingredients and lightly toss.
