Successful Sustainability in Collegiate Catering is Worth The Effort!

Colleges and universities have long been at the forefront of championing environmentally friendly practices. Today, collegiate catering operations have an incredible opportunity to support and take advantage of sustainability initiatives on campus; but, it isn't easy being green. In this session, you will hear best practices and lessons learned from an experienced panel of collegiate foodservice professionals who have implemented a variety of “green” initiatives into their catering operations. They will offer ideas and resources for overcoming the unique challenges of sustainability in collegiate catering. Topics to be covered include:

• Tips for offering more “green fare,” including local, organic, fair trade, and other  
   sustainable food sources
• Creative ideas to reduce the use of bottled water and other disposable products
• Planning strategies for holding a “zero-waste” event
• Marketing your sustainability efforts to increase profits
• Key catering related criteria included in the Sustainability Tracking, Assessment and
  Rating System (STARS) program administered by the Association for Advancement of
  Sustainability in Higher Education (AASHE) and in the NACUFS Sustainability Guide.

Catering with College Spirit
Catering on campus presents a unique set of opportunities and challenges – yet every day, college and university catering departments show their school spirit through innovative menus, designs, and logistics.  Join your peers for a series of roundtable discussions where you can share practical ideas and solutions specific to the collegiate setting.  Coordinated by the National Association of College & University Food Services (NACUFS), these sessions will be beneficial for both self-operated and contracted institutions.  During the session you’ll have the opportunity to participate in at least three different discussions of your choice.  Come prepared to share your ideas and ask questions – and leave with practical solutions for your operation.  Arrive early, as this session is limited to the first 150 college and university caterers ready to show their school spirit!
